INGREDIENTS

MUTTON 500 G,CLOVES 4 N,CINNAMON STICKS 2 N,CARDAMOM 4 N,BAY LEAVES 3 N, BUTTER 2 TB,CURD 1 CUP,CASHEW NUT AND POPPY SEED PASTE 1 TB,OIL 1 TB,WHITE PEPPER POWDER 1 TB,GINGER GARLIC PASTE 1 TB,ONION PASTE 4 N,SALT,GREEN CHILLY 3 N,GARAM MASALA 1 TB,SAFFRON ½ G ,RAW PAPAYA PASTE 2TBSP,1 WHOLE GARLIC,1 WHOLE ONION,20 MAKHANA FRIED IN OIL.

PROCESS

1.FIRST MARINATE THE MUTTON WITH SALT, RAW PAPAYA PASTE AND REST FOR OVERNIGHT.THEN BOIL THE MUTTON IN KADHAI IN SLOW FLAME WITH ENOUGH WATER & 1 WHOLE GARLIC,1 WHOLE ONION.

2.HEAT BUTTER IN A PAN ADD WHOLE GARAM MASALA (CLOVES, CINNAMON STICKS, CARDAMOM, BAY LEAVES), ONION PASTE, GINGER GARLIC PASTE.COOK TILL RAW FLAVOR IS GONE AND ADD WHITE PEPPER POWDER, SALT, CHOPPED GREEN CHILLY, CASHEW NUT AND POPPY SEED PASTE, CURD.COOK 3 MINS AND ADD MARINATED MUTTON, WATER ONCE IT COMES TO BOIL PUT THE LID ON AND LET IT COOK FOR 15 MINUTES IN A SLOW FLAME.AFTER THAT ADD GARAM MASALA, SUGAR.MIX IT & COOK FOR TILL MUTTON IS TENDER,ADD MAKHANA.

3.HEAT OIL IN ANOTHER PAN ADD RED CHILLY, ONION RINGS, SPRINKLE SOME SALT, COOK TILL ONIONS ARE PINK AND POUR THIS ON THE TOP OF THE MUTTON COOK IT FOR 2 TO 3 MINUTES AND ADD SAFFRON.SWITCH OFF THE FLAME.
