MUTTON YAKHNI PULAO

ONION WHOLE PEELED:  2 MEDIUM SIZE  GARLIC: NON PEELED: 1 BIG SIZE
CORIANDER SEEDS:  3 TBSP FULL     FENNEL SEEDS:  4 TBSP FULL
CINNAMON STICK:  2 THREE INCH SIZE    CUMIN SEEDS:  1 TBSP FULL
BLACK CARDAMOM: 5    GREEN CARDAMOM: 15
BLACK PEPPER WHOLE: 1 TBSP FULL      CLOVES  1/2 TBSP
GINGER WHOLE PEELED: 2 PIECES OF 2″      BAY LEAVES:  4
SALT: 2 TABLE SPOON FULL,MUTTON 1KG.

                                              PULAO MASALAH INGREDIENTS
GHEE(PREFERRED) OR OIL (OPTIONAL): 1 CUP  ,   YOGURT: 300 GM
 ONION SLICED: 300 GM  ,  GINGER PASTE: 3 TBSP FULL
GARLIC PASTE: 2 TBSP FULL     ,    SHAH ZEERA (BLACK CUMIN): 1 TBSP (WHOLE OR GROUND)
GREEN CARDAMOM: 10  ,    BLACK CARDAMOM: 4
CLOVES: 15      ,        BLACK PEPPER WHOLE: 1/2 TBSP
CINNAMON STICK 1 OF 3″ LONG         ,         BAY LEAVES: 3 
BASIC GARAM MASALA GROUND: 2 TBSP FULL       ,         FENNEL POWDER: 1 TBSP FULL
JAVETRI POWDER(MESH): 1/4 TBSP    ,      JYFAL POWDER(NUTMEG): 1/4 TBSP
KEWDRA WATER: 6 TBSP       ,        EXTRA LONG BASMATI RICE 1 KG.

PROCESS

1.TAKE ALL INGRADIENTS FOR YAKHNI IN COOKING BOWL,MIX 3 GLASS WATER.NOW BOIL IT IN HIGH FLAME.NOW GIVE 2 TBSP SALT AND CLOSE THE LEAD AND BOIL FOR ATLEAST 50 MINS IN LOW FLAME.(MEAT TENDERS UPTO 80%).PLEASE DON’T USE BABY GOAT FOR PULAO.

2.NOW SEPARATE MUTTON FROM YAKHNI.AND STRAIN ALL THE SPICES FROM YAKHNI.

3.TAKE WHITE OIL IN COOKING PAN AND FRY THE SLICED ONIONS UNTILL BROWN COLOURED.NOW MIX YOGURT AND GINGER/GARLIC PASTE INTO THIS.

4.NOW MIX ALL SPICES FOR PULAO INTO THIS AND COOK IN MEDIUM FLAME.AFTER A WHILE MIX THE SEPERATED YAKHNI.AND BOIL FOR A MINUTE.

5.NOW GIVE THE MUTTON INTO THIS MIXTURE AND COOK FOR 15 MINS IN LOW FLAME.

6.NOW MIX SOAKED RICE(FOR 45 MINS).TASTE FOR SALT NOW.ADD WATER IF NEEDED.BOIL AT HIGH FLAME UNTILL RICE IS BOILED AND CHECK CAREFULLY FOR RICE AND ALWAYS STIR IT.

7.AFTER SOAKING OF WATER,ADD FRIED ONION,GHEE,KHEWDA WATER.

8.SERVE HOT WITH RAITA OR KEBAB.
