INGREDIENTS- 4 PC HILSA FISH,500 GM BOILED EXTRA LONG GRAIN BASMATI RICE,100 GM YOGURT,SALT TO TASTE,3-4 CHILLIES,YELLOW FOOD COLOR MIXED WATER,BUTTER,MUSTARD PASTE 2TBSP,MUSTARD OIL 4 TBSP,BROWN ONION 1/2 BOWL,MILK 1 CUP,4 CARDAMOM.

PROCESS-

1. MIX YOGURT,MUSTARD PASTE,SALT AND ADD TO HILSA PIECES IN A MICRO PROOF BOWL.ADD OIL AND CHILLIES FROM  TOP.COOK IN MICROWAVE FOR 8 MINS.

2. IN A HUNDI,POUR THE GRAVY OF HILSA,ADD RICE,FOOD COLOUR,MILK, CARDAMOM,BROWN ONION.MAKE THE 2ND LAYER OF RICE.ADD BROWN ONION,PUT THE FISHES & COOK IN SLOW FLAME FOR 8 MINS.

 

3. NOW SWITCH OFF THE GAS AND ADD A HOT CHARCOAL IN THE MIDDLE OF HUNDI.POUR BUTTER FROM TOP.PUT ON THE LID AND KEEP ASIDE FOR 20 MINS.

4. SERVE HOT HILSA BIRYANI.
