HERBED CREAM PANEER

INGREDIENTS-  Full fat milk 1.5 ltrs, 1-2 fresh thyme sprigs, 2 fresh rosemary sprigs, 2 fresh oregano sprigs, 150 ml fresh cream, 60 ml vinegar, 1tbsp red chilli flakes,1 tbsp roasted fenugreek leaves.

PROCESS-

1. Heat a non-stick pan. Add milk and bring to a boil.

2. Remove the leaves of the herbs from the stem, roughly chop and add to the milk. Stir.

3. Add cream, chilli flakes ,fenugreek leaves, mix well and bring to a boil once again. Add vinegar, mix till the milk curdles. Add ice cubes and mix.

4. Place a muslin cloth over a large bowl. Pour the curdled milk in it, strain and tie a tight knot.

5. Keep a perforated plate on another bowl. Put the muslin cloth with the curdled milk on it, place a heavy weight on top and set aside for 2 hours or till the liquid strains completely.

6. Use as required.
